Laksa lockdown 5
My friend Joseph Kuek from London has contributed the latest Laksa Lockdown recipe.
His spicy aubergine dish is simple, healthy and totally delicious. Aubergines, eggplants or brinjals, they are simply awesome, as a main dish or an accompaniment.
Joepsh's Awesome Aubergines
2 large aubergines
½ tsp pepper
1 tbsp soy sauce
1 tbsp oyster sauce
½ tsp mixed herbs
½ tsp turmeric powder
2 tbsp extra virgin olive oil
2 birds eye chillies, remove seeds and slice thinly
½ cup chopped fresh basil
Heat oven to 200 degrees C.
Remove stems from aubergines and slice each one into 4 lengthways.
Mix soy and oyster sauces, pepper, herbs, turmeric powder and olive oil thoroughly.
Line a baking tin with foil and spray lightly with oil.
Put aubergine slices on baking try and spread thickly with sauce and herb mixture.
Top with birds eye chillies and basil.
Bake for 20 minutes until aubergines are tender and lightly golden.
